"This is the real deal folks"

This is the real deal folks. I ordered a couple of American wagyu briskets. They were shipped on a monday and arrived well packed and still frozen solid on wednesday. I was initially disappointed with the smaller of the 2 briskets because the flat was so thin. But I thawed it for the weekend and then trimmed it into a 9.5 lb. beauty. I rubbed it with kosher salt and 16 mesh pepper and threw it on the pit. 11 hours later I pulled that beauty off and let it rest. When it came time to slice it the entire brisket sliced, even the point. No waste. If you have cooked brisket enough you know the point can be pretty fatty. Not this brisket. I usually make chopped for sandwiches out of the fatty part of the point but this thing sliced up nicely. And the flavor. Wow! Outstanding flavor and the meat seemed denser than regular packer brisket making it much more filling. I spoke with Bradon on the phone prior to ordering and he couldn't have been nicer. Absolutely a great all around experience. And one final thing. The meat I trimmed off in two 1 lb. pieces to shape the brisket for more even cooking didn't go to waste. I cooked them next to the brisket and pulled them much earlier because of their size. They were just as good as the rest. Five stars all around. I can't wait to try the full blood wagyu.
